Stir-fry Kale & Tomatoes

1 onion finely chopped

1 clove of garlic crushed

1/2 a punnet or more of small tomatoes cut in halves or quarters

Kale

Oil

Boil water and place chopped Kale in for 2 minutes, drain and set aside.

Heat oil in a frying pan, add onion and garlic and cook until tender, add tomatoes and cook for another minute or two.

Lastly add the Kale and cook for another minute.

Note: you could use spinach instead if you like.  It was very taste and a different way to use the Kale.  Kale is a rich source of  Iron.
